Certaldo specialities
The Certaldo onion boasts a long and storied past: Mentioned by Boccaccio in The Decameron and featured on the town's coat of arms, which once bore the motto: "By nature I am strong yet sweet / And please both those at rest and those who work."
This unique variety of red onion has been cultivated since the Middle Ages, when the Alberti counts—feudal lords of the medieval town during the 12th century—added it to their official banner. It grows exclusively in the green Certaldo countryside, deriving its distinctive flavor from the sulfur-rich soil found in these parts.

In 2016, a panel of ASET food-and-wine journalists specializing in agri-food excellence awarded the La Rossa brothers, owners of Forno Moderno, for making "the best schiacciata fiorentina all'olio" (Florentine olive oil flatbread).
